Excellent to taste as a first course, ideal with a drizzle of extra virgin olive oil and croutons. Also try it lukewarm throughout the year.
The legumes chosen are naturally gluten-free and rich in fiber and protein, which is why they are widely used in vegetarian cuisine; moreover, the low content of fats and sugars makes them particularly suitable for low-calorie diets.
This artisan soup enhances the authentic flavor of Vialone Nano Integrale Rice grown in Isola della Scala by the Melotti family.
  
Cooking time : 50 - 60 minutes
  
Ingredients: wholegrain Vialone Nano Rice (55%), shelled chickpeas, red azuki beans, Borlotti beans, black beans, shelled peas, brown, yellow, red lentils. May contain traces of soy and gluten.
  
Preparation: Bring about 2,5 l of water or vegetable broth to a boil in a saucepan, pour in the contents and cook over low heat, season with salt and oil to taste. It is advisable to rinse thoroughly in cold water before cooking. Soaking is not necessary.
